Buttermilk Flap Jacks
We call it Flap Jacks or Plaatkoekies (Afrikaans) and the Americans call it Pancakes, no matter what they are called, they are the best thing on your plate.
These are nice light and fluffy and perfect for breakfast, lunch or any time really :)
My mom and granny use to make these without even using a recipe, it was that much a part of our family. But I used the recipe from the 7de Laan - Vier Fees recipe book as both my mom and granny had the recipe in their heads and we never wrote it down, however it was pretty much just like this from my memory.
Serve with honey, syrup or my favourite - Maple Syrup!! Add bananas, strawberries, nuts, chocolate (nutella or choc chips) or crispy bacon. You can also add some coconut milk, cream or cream cheese - endless options.
You need:
Mixer
Measuring spoons (but you can also wing it with standard cutlery)
Mixing bowl
Frying pan (I prefer using non-stick pans)
Spatula and Ladle
Ingredients
2 eggs (large)
125ml (1/2 cup) buttermilk
250ml (1 cup) milk
30ml (2 Tbsp) sunflower oil
1 tsp vanilla essence
500ml (2 cups) cake flour
45ml (3 Tbsp) caster sugar
2,5ml (1/5 tsp) salt
15ml (1 Tbsp) baking powder
coconut oil / sunflower oil for frying if you do not have a non-stick pan
Metod
Pre heat your pan. Use a medium heat for cooking. You want them to be nice and brown and cooked inside.
Beat the eggs till frothy, add all the wet ingredients and mix well.
Add all the dry ingredients and mix until a nice smooth batter. (you can pre mix the dry and sift them in, I don't)
Test your pan's heat by adding a small drop of batter to see if it browns. If it turns brown quickly your pan is too hot, turn it down and wait a bit before testing and cooking your flap jacks.
If it takes toooo long to brown it's too cold, then up the temperature a bit.
Use a ladle and spoon the batter onto your pan. Do not let the batter drops touch.
You can spoon as much or as little in as you wish - the amount you spoon in will determine the size of you flap jacks.
Let them cook for a bit on the one side - bubbles will form on the top side and the top will start to 'dry out' slightly. When that occurs turn your flap jacks over, but do not push them down, else you will remove the air and fluffiness.
Now let them brown on the other side. That's it.
Serve with your favourite toppings or as is and Enjoy!
